1/2 cup packed brown sugar |
1 stick unsalted butter |
1 large egg |
1/2 cup molasses |
1/2 cup buttermilk |
1 tsp vanilla |
1/4 tsp nutmeg |
2 cups flour |
1 tbs baking powder |
1/4 tsp baking soda |
1/2 tsp salt |
filling |
2 cups finely chopped apples |
1/2 cup water |
1 cup packed brown sugar |
1 tsp cinnamon |
Directions:
1. Cake: 2. Cream sugar and butter till light 3. Slowly blend in egg and molasses 4. Beat in buttermilk, vanilla and nutmeg 5. Sift dry ingrdients and slowly add to ccreamed mixture until well blended 6. Grease and flour 2, 8 inch round cake pans 7. Divide batter in pans 8. Bake in a preheated 350F oven until tested done about 20 mins 9. Cool cake in pans on a rack 10. Meanwhile make filling: 11. Cook apples in the water till tender 12. Stir in the brown sugar and bring to a boil and cook and stir until 13. mixture thickens and is syrupy 14. Place one of the cake layers on a serving plate 15. Spoon on half the filling evenly on the cake 16. Place the 2nd layer over filling and top the layer with remaining filling |
