Ingredients:
1 cup butter, softened |
1 cup confectioners' sugar |
2 teaspoons vanilla extract |
2 cups all-purpose flour |
1/2 teaspoon salt |
1 (3 ounce) package cream cheese, softened |
1 cup confectioners' sugar |
2 tablespoons all-purpose flour |
1 teaspoon vanilla extract |
1/2 cup finely chopped pecans |
1/2 cup flaked coconut |
1/2 cup semi-sweet chocolate chips |
2 tablespoons butter |
2 tablespoons water |
1/2 cup confectioners' sugar |
Directions:
1. In a large mixing bowl, cream butter, sugar and vanilla. 2. Combine flour and salt; gradually add to the creamed mixture and mix well. 3. Shape into 1-in. balls; place 2 inches apart on ungreased baking sheets. 4. Make a deep indentation in the center of each cookie. 5. Bake at 350° for 10-12 minutes or until the edges just start to brown. 6. Remove to wire racks to cool completely. 7. For the filling, in a large mixing beat cream cheese, sugar, flour and vanilla. 8. Add pecans and coconut; mix well. 9. Spoon 1/2 teaspoon into each cookie. 10. For topping, heat chocolate chips, butter and water in a small saucepan until melted. 11. Stir in sugar. 12. Drizzle over cookies. |
