An applesauce muffin recipe. Ingredients:
4 cups all-purpose flour |
1 tablespoon ground cinnamon |
1 tablespoon ground allspice |
2 teaspoons baking soda |
1 cup butter or margarine, softened |
2 cups sugar |
2 eggs |
2 cups applesauce |
2 tablespoons vanilla extract |
1 cup raisins |
Directions:
1. In a bowl, combine, flour, cinnamon, all-spice and baking soda; set aside. 2. In a mixing bowl, cream butter and sugar. 3. Beat in eggs, applesauce and vanilla; stir into dry ingredients just until moistened. 4. Fold in raisins. 5. Fill greased or paper-lined muffin cups three-fourths full. 6. Bake at 350 degrees for 20-25 minutes or until muffins test done. 7. Cool in pan 10 minutes; remove to a wire rack. 8. Yield: 2 dozen. |
