From Nigella Lawson's How To Be A Domestic Goddess Ingredients:
1 cup unsalted butter, softened |
3/4 cup sugar, plus 2 tbsp |
1 lemon, juice and zest of |
3 large eggs |
1 1/3 cups self-rising cake flour |
1/2 cup all-purpose flour |
Directions:
1. Butter a 9x5 loaf pan and line with parchment or wax paper. Preheat oven to 350*. 2. Cream butter and sugar, then add lemon zest. Add the eggs one at a time with a tbsp of flour for each. Then gently mix in the rest of the flour and finally the lemon juice. 3. Pour batter into prepared pan. Sprinkle with up to 2 tbsp sugar. 4. Bake 1 hour or until cake tester comes out clean. Remove to wire rack and let cool in pan before turning out. |
