I generally dislike granola bars, but just can't resist these - they're delish. I'm including my most standard version, but I've had great results using either quick or slow oats, and leaving out the flax (and even the wheat germ, when I ran out) and the almonds. I tried cutting down the sugar and substituting apple sauce, but those weren't popular variations in my house.
Ingredients:
2 cups rolled oats
1/2 cup brown sugar, packed
1/3 cup wheat germ
2 tablespoons flax seeds, ground
1 1/2 teaspoons ground cinnamon
1 cup whole wheat flour
1/2 cup dried blueberries
1/2 cup chocolate chips
1/2 cup almonds, slivered
1 teaspoon salt
1/2 cup honey
1 egg, beaten
1/2 cup canola oil
2 teaspoons vanilla extract
Directions:
1. Preheat the oven to 350 degrees F. Line a 9x13 inch baking pan with parchment, lightly oiled on both sides.
2. In a large bowl, mix together the oats, brown sugar, wheat germ, flax, cinnamon, flour, toss-ins and salt. Make a well in the center, and pour in the honey, egg, oil, and vanilla. Mix well using your hands. Pat the mixture evenly into the prepared pan.
3. Bake for 30 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, then cut into bars while still warm. Do not allow the bars to cool completely before cutting, or they will be too hard to cut. I cut them 8 across and three down to get bars that are approximately 1.5 x 3 inches.
