This is the most expensive meal I ever made. I made it for my mom and dad's 35th wedding anniversary. It is beyond words!!! A once in a lifetime meal for sure.
Ingredients:
1/2 cup white wine
2 tablespoons sherry wine vinegar
1/2 cup maine lobster stock, recipe is posted
4 tablespoons minced shallots
2 cups heavy cream
1 pound maine lobster meat, fresh or frozen, fresh is best
1-1/2 avocados, peeled and diced
8 plum tomatoes, peeled and diced
salt and pepper to taste
3 quarts of water
1-1/2 pounds fettuccine pasta
parsely leaves, chopped for garnish
Directions:
1. Lobster and white wine cream sauce:
2. In a medium-sized sauce pan, over moderately high heat, combine the wine, vinegar, lobster stock and shallots.
3. Stir frequently while bringing to a boil.
4. Continue stirring and boiling until liquid has reduced to a little less than 1/2 cup.
5. Add cream and continue to boil. Reduce until thickened.
6. Add lobster meat, avocado and tomato.
7. Bring to a boil and season with salt and pepper.
8. Reduce heat to a minimum, just to keep it warm.
9. In a 4-6 quart pot, bring water to a boil, add salt, return to boiling and add pasta.
10. Stir frequently making sure the pasta strands do not stick to the pot or each other.
11. Boil the pasta according to package directions or until al dente.
12. Drain and return to pot.
13. Add lobster sauce and toss to mix.
14. Serve immediately, garnished with chopped parsley.
15. It's a meal worth 1000 words!!!
