In Belgium everyone eats mussels when they are in season. Here is an easy way to prepare them taken from De Vlaamsche Pot by Marie Cattoor. Ingredients:
4 kg mussels, cleaned and debearded |
2 onions, chopped coarsely |
3 stalks celery, chopped coarsely |
1/2 bunch parsley |
20 g butter |
fresh coarse ground black pepper |
Directions:
1. After cleaning and debearding the mussels, throw away any that are open. Melt the butter in a large pot that has a lid and sautë the onions and celery for about 3-4 minutes with stirring. Put the cleaned mussels in the pot and cover them with the parsley. Season with pepper. Put the lid on the pot and let the mussels cook for about 15 minutes, or until they have opened. Serve them from the pot with french fries and mayonnaise. |
