For a different Mid eastern flavor. This recipe makes a great variety of Chicken. It can be baked in the oven or on prepared on the grill. I could not figure out how to set the fat content lower. The marinade is not used to bake the meat. Keep in mind that the colesterol and fat content of this recipe is lower once the marinade is dicarded and the meat is cooked. I advice grilling for lower fat.
Ingredients:
4 boneless, skinless chicken breast
1/4 cup extra virgin olive oil
1 tsp oregano
1/2 tsp cumin
1/2 tsp ground clove
1/2 tsp allspice
3 cloves of garlic
Directions:
1. mix together olive oil, spices, and garlic.
2. Place chicken into a pan or bag that can be sealed.
3. Pour spice mixture over chicken and coat well.
4. Seal container or bag, and marinate over night.
5. remove meat from bag and discard leftover marinade.
6. Bake at 350 degrees for about 30 minutes. Oven settings vary for each oven.
7. Can also be used to marinate pork.
8. Grilling is a great idea for these marinated chicken breasts.
