Moroccan Sweet Potato Salad |

You can add peel of 1/2 preserved lemon, chopped. Ingredients:
1 onion, coarsely chopped |
5 tbsp extra virgin olive oil |
1 lb sweet potatoes, peeled and cubed |
1/2 tsp ground ginger |
1/2 tsp ground cumin |
1/2 tsp paprika |
1/2 cup green olives |
1 tbsp fresh lemon juice |
2 tbsp parsley, chopped |
Directions:
1. Saute the onion in 2 tbsp olive oil until golden. Add cubed sweet potatoes to the pan and barely cover with water. Add spices and 2 more tbsp olive oil. Cook until the potato pieces are tender and the liquid has reduced to a sauce, stirring occasionally. 2. Serve at room temperature, mixed with olives and preserved lemon peel, if using, sprinkled with lemon juice, 1tbsp olive oil, and chopped parsley. |
