Moroccan Style Hummus

Ingredients:
1 medium onion
1 can chickpeas -- (19-oz) drained
3 tablespoons melted butter
2 tablespoons water
1/2 teaspoon cumin
salt and freshly ground pepper to taste
1 pinch cayenne
1 pinch saffron -- large pinch
1 clove garlic -- crushed
1 tablespoon olive oil
Directions:
1. Place onion in a saucepan, cover with water, and bring to a boil.
2. Cover and cook over medium heat for 10 minutes.
3. Drain and allow to cool.
4. Place onion and remaining ingredients, except olive oil, in a food
5. processor and blend to a fine paste, adding a little water if necessary.
6. Place on a serving platter, sprinkle with oil and serve.
