Serrooda, recipe email- different spin on hummus, note the cooked onions, saffron etc Ingredients:
1 medium onion |
1 can chickpeas -- (19-oz) drained |
3 tablespoons melted butter |
2 tablespoons water |
1/2 teaspoon cumin |
salt and freshly ground pepper to taste |
1 pinch cayenne |
1 pinch saffron -- large pinch |
1 clove garlic -- crushed |
1 tablespoon olive oil |
Directions:
1. Place onion in a saucepan, cover with water, and bring to a boil. 2. Cover and cook over medium heat for 10 minutes. 3. Drain and allow to cool. 4. Place onion and remaining ingredients, except olive oil, in a food 5. processor and blend to a fine paste, adding a little water if necessary. 6. Place on a serving platter, sprinkle with oil and serve. |
