Moroccan Style Fish With Spinach

The marinade for this dish is called charmoula and is a classic Moroccan seasoning for fish and seafood.
Ingredients:
4 tablespoons extra virgin olive oil
4 tablespoons lemon juice
4 -6 scallions, finely chopped (spring onions)
4 tablespoons chopped fresh parsley
2 teaspoons chopped fresh cilantro (coriander leaves)
2 teaspoons paprika
1 teaspoon ground cumin
1/4 teaspoon cayenne (to taste)
1 lemon, zest of
salt
4 (6 ounce) fish fillets
3 tablespoons olive oil
1 1/2 lbs potatoes, sliced
1 onion, chopped
2 -4 garlic cloves, chopped
4 -6 tomatoes, chopped
1 lb fresh spinach, chopped
lemon wedges (to garnish) or lime wedge (to garnish)
Directions:
1. Combine the ingredients for the charmoula.
2. Place the fish fillets in a large bowl or plastic bag and cover with the charmoula.
3. Marinate refrigerated for 1 to 3 hours.
4. Heat the oil in a large heavy pot and saute the potatoes, stirring occasionally, until lightly browned, 10 to 15 minutes. Add the onion, garlic, and tomatoes and cook until the onion is tender, about 5 minutes.
5. Add the spinach and stir to combine.
6. Place the fish fillets on top of the vegetables and pour the marinade over the fish.
7. Cook tightly covered over medium-low heat until the fish is firm and opaque, 15 to 20 minutes.
