Moroccan Style Fish With Spinach |

The marinade for this dish is called charmoula and is a classic Moroccan seasoning for fish and seafood. Ingredients:
4 tablespoons extra virgin olive oil |
4 tablespoons lemon juice |
4 -6 scallions, finely chopped (spring onions) |
4 tablespoons chopped fresh parsley |
2 teaspoons chopped fresh cilantro (coriander leaves) |
2 teaspoons paprika |
1 teaspoon ground cumin |
1/4 teaspoon cayenne (to taste) |
1 lemon, zest of |
salt |
4 (6 ounce) fish fillets |
3 tablespoons olive oil |
1 1/2 lbs potatoes, sliced |
1 onion, chopped |
2 -4 garlic cloves, chopped |
4 -6 tomatoes, chopped |
1 lb fresh spinach, chopped |
lemon wedges (to garnish) or lime wedge (to garnish) |
Directions:
1. Combine the ingredients for the charmoula. 2. Place the fish fillets in a large bowl or plastic bag and cover with the charmoula. 3. Marinate refrigerated for 1 to 3 hours. 4. Heat the oil in a large heavy pot and saute the potatoes, stirring occasionally, until lightly browned, 10 to 15 minutes. Add the onion, garlic, and tomatoes and cook until the onion is tender, about 5 minutes. 5. Add the spinach and stir to combine. 6. Place the fish fillets on top of the vegetables and pour the marinade over the fish. 7. Cook tightly covered over medium-low heat until the fish is firm and opaque, 15 to 20 minutes. |
