Delicious veggie ragout Ingredients:
1 tbsp olive oil |
1 (lb) eggplant |
3 large onions |
2 tsp ginger |
2 tsp garam masala |
1 tsp paprika |
1 tbsp tomato paste |
3 c vegetable broth |
2 c cauliflower |
2 carrots |
1 red pepper |
1 1/2 c chickpeas |
1/2 c dried apricot |
1/4 c raisins |
1/2 c olives |
Directions:
1. heat oil 2. add eggplan, garlic, onion, ginger, garam masala and paprika and cook for 8 minutes or until soft 3. stir in tomato paste 4. add broth, cauliflower, carrots, red pepper, chickpeas, apricots, raisins, salt and pepper to taste 5. cover and simmer for 15-20 minutes or until tender 6. stir in olives. |
