Moroccan Spiced Beef Patties With Couscous |

Adapted from Real Simple on line. Ingredients:
1 1/2 cups couscous or 1 1/2 cups fine bulgur |
1 medium zucchini, halved lengthwise and thinly sliced |
1 medium tomato, chopped |
1/2 cup raisins |
1/3 cup fresh mint leaves, chopped |
2 tablespoons olive oil |
1 tablespoon lemon juice |
salt and black pepper |
1 1/2 lbs ground beef |
1 cup grated carrot (2 medium) |
1/4 cup chopped parsley |
3 scallions, trimmed and thinly sliced |
1 tablespoon tomato paste |
1 teaspoon paprika |
1 teaspoon ground cumin |
1/2 teaspoon ground cinnamon |
Directions:
1. Directions. 2. 1.Place couscous in a large bowl and add 1 1/2 cups boiling water. Cover and set aside for 5 minutes, then fluff with a fork. 3. 2.Toss couscous with the zucchini, tomato, raisins, mint, 2 tablespoons oil, lemon juice, 1 teaspoon salt, and 1/4 teaspoon pepper. Set aside. 4. 3.In a large bowl, combine beef, carrots, parsley, scallions, tomato paste, paprika, cumin, cinnamon, 1 teaspoon salt, and 1/2 teaspoon pepper. Make twelve 1/2-inch-thick patties. 5. 4.Heat remaining oil in a nonstick skillet. In batches, cook patties over medium heat, 3 to 4 minutes per side for medium-rare. Serve with couscous. |
