Love this recipe...It's so easy to make and loaded with lots of flavor Ingredients:
1 3-4 lb. spaghetti squash |
2 cloves garlic, finely chopped |
1/2 stick butter, softened |
1 tsp. cumin |
1/3 tsp. coriander |
1/8 tsp. cayenne |
3/4 tsp. salt |
2 tbls. cilantro, chopped...(i use parsley as i don't like cilantro) |
Directions:
1. Poke squash all over with fork and microwave for 6-7 minutes 2. Turn over and microwave until squash is tender, another 8-10 minutes 3. Cool 5 minutes 4. Melt butter in skillet and cook garlic until golden 5. Stir in spices and remove from heat 6. Halve squash lengthwise and remove seeds 7. Scrape flesh with fork 8. Add to bowl with butter mixture and cilantro 9. Toss to coat |
