Moroccan Salad With Charmoula/Chermoula Dressing |

A Moroccan salad that I got in a restaurant once. I estimated the quantities. Ingredients:
1 potato, chopped |
1 bell pepper, chopped |
1 small eggplant, chopped |
2 ounces tempeh |
1 small red onion, chopped |
2 garlic cloves, coarsely chopped |
2 tablespoons olive oil |
2 tablespoons lemon juice |
1/2 teaspoon paprika |
1/2 teaspoon cumin |
1/4 cup parsley |
salt |
pepper |
Directions:
1. Saute vegetables in olive oil until tender. 2. Add tempeh, paprika, and cumin and heat through. 3. Add parsley and toss. 4. Season with lemon juice, salt, and pepper. |
