Moroccan Roasted Salmon With Mango Salsa |

Ingredients:
1 1/2 cups chopped peeled mangoes (about 1 large) |
2 tablespoons finely chopped red onions |
2 tablespoons chopped fresh mint |
2 tablespoons orange juice |
1 1/2 teaspoons harissa (a hot red pepper sauce) |
4 salmon fillets, skinned (about 1 1/2 pounds total) |
1/4 teaspoon salt |
Directions:
1. Preheat oven to 450º. 2. Combine chopped mango, onion, mint and orange juice in a bowl. Cover and chill. 3. Spread harissa over both sides of salmon fillets; sprinkle with salt. Place salmon on a baking sheet coated with cooking spray. Bake at 450º for 20 minutes or until the fish flakes easily when tested with a fork. 4. Serve with the mango salsa. |
