Moroccan Roasted Pepper Salad |

If you like peppers, you will love this delightful salad. Ingredients:
6 large green bell peppers |
4 medium tomatoes diced |
1 tablespoon olive oil |
2 teaspoons lemon juice |
2 cloves garlic minced |
1 teaspoon paprika |
1/2 teaspoon salt |
lettuce leaves |
Directions:
1. Preheat oven to 450 then place peppers on foiled lined baking sheet and bake 20 minutes. 2. Remove from oven and place peppers in paper bag then seal and set aside 15 minutes. 3. Peel off skins then remove stems and seeds and cut into 1” pieces. 4. Combine peppers with remaining ingredients then mix thoroughly. 5. Cover and refrigerate 1 hour then arrange lettuce leaves on platter and top with salad. |
