This dish is easy and flavorful, a great side dish for chicken or pork chops. Ingredients:
2 teaspoons margarine |
1 medium yellow onion, chopped (about 1 cup) |
1 clove garlic, mince |
2 1/2 cups water |
1 cup white rice |
1/2 cup orzo |
1/4 cup toasted slivered almonds (optional) |
1/4 cup golden raisins |
1/2 teaspoon salt |
1/2 teaspoon grated fresh ginger |
1/2 teaspoon ground cumin |
Directions:
1. In a medium saucepan, melt margarine over medium heat. Add onion and garlic; saute until tender, about 5 minutes. Add water and bring to a boil. 2. Stir in rice, orzo, almonds, raisins, salt, ginger and cumin. Reduce heat to low; simmer, covered, until liquid is almost absorbed, about 3 minutes. 3. Place pilaf on serving plate. Fluff pilaf lightly with a fork. Serve immediately. |
