This dish tastes best when prepared ahead of time. Spicy, fragrant and a wonderful addition for any meal. Save and freeze the extra sauce for more meatballs, pasta, or a sauce to dip bread in. Ingredients:
1 lb ground meat ( i use ground turkey ) |
1 clove garlic minced |
1 tsp grated lemon zest |
1 tbs chopped cilantro |
1/2 tsp cumin |
1/4 tsp cinnamon |
1 tsp salt |
1/4 cup fresh or dried bread crumbs |
2 tbs chicken broth |
sauce |
1 large onnin chopped |
1, 28 oz can crushed tomatoes with liquid |
1/2 cup chicken stock |
1 tsp paprika |
1 tsp cumin |
1 tsp cinnamon |
1/2 tsp ground ginger |
1 tsp grated orange zest |
salt and pepper to taste |
2- 3 tbs olive oil |
Directions:
1. Combine all meatball mixture 2. Form into small balls 3. set aside 4. In heavy duty pan, heat oil 5. Add onions and spices, salt and pepper and cook and stir over medium Heat to soften onions and make spices release their fragrance. 6. Add the tomato sauce and chicken broth 7. Stir to blend well 8. Add meatballs into sauce 9. Bring to a boil 10. Reduce heat, cover and simmer about 20 minutes or meatballs cooked 11. Let meatballs cool in the sauce 12. Reheat to serve 13. Garnish if desired with preserved lemons or chopped cilantro or parsley. 14. Note: this makes more sauce than needed, so save or freeze 15. This versatile sauce can be used for cuscous, pasta or more meatballs |
