This is a grogeous little recipe.....I sometimes make a little more of the marinade and rub it into lamb steaks to have as a main, my partner loves it! Ingredients:
1 teaspoon ground coriander |
2 teaspoons ground cumin |
2 teaspoons sweet paprika |
1/4 teaspoon chili powder (more or less, depending on how spicy you like it) |
1 clove garlic, crushed |
1 tablespoon finely chopped fresh parsley |
2 tablespoons olive oil |
24 french trimmed lamb cutlets (990g) |
1 teasoon cumin seeds, toasted |
1/4 cup (60g) prepared baba ghanoush |
Directions:
1. Combine ground coriander, ground cumin, sweet paprika, chili powder, garlic, parsley and oil in a medium bowl; rub mixture all over lamb. 2. Cook lamb on heated oiled grill plate (or grill or BBQ) until cooked as desired. 3. Sprinkle lamb with cumin seeds; serve with baba ghanoush |
