Moroccan Inspired Jewelled Couscous |

Something I whipped up for my grandma's birthday dinner / going away party this weekend. My grandparents are off to Spain tomorrow and are taking a side trip to Tangiers, so what better way to celebrate! Ingredients:
1/2 teaspoon ground cumin |
1/2 teaspoon fresh-grated ginger |
pinch ground cloves |
1/4 teaspoon ground saffron |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
juice and grated zest of one orange |
1 3/4 cups vegetable broth |
1/2 cup dried cranberries |
1 1/2 cups whole wheat couscous |
Directions:
1. Bring cumin, ginger, cloves, saffron, salt, pepper, orange zest and juice and vegetable broth to a boil. 2. Add the dried cranberries, reduce the heat and simmer 5 minutes. 3. Return the mixture to a boil, stir in the couscous and remove from heat 4. Cover, and let stand 5 minutes. Fluff with a fork and serve. |
