a wonderful combo of flavors! Ingredients:
1 cup couscous |
1/2 cup dried cherries |
1 cup boiling water |
5 tbs olive oil divided |
1 large orange bell pepper cut into bite size piece |
1 large onion halved and then sliced thin |
1 1/2 tsp ground cumin |
1/2 tsp ground ginger |
1/4 tsp cinnamon |
salt and pepper |
1, 16 oz can chickpeas drained |
1/4 cup fresh chopped cilantro |
3 tbs rice wine vinegar |
3 tbs frozen ojrange concentrate thawed |
Directions:
1. Place couscous and cherries in a bowl. 2. Cover with boiling water, 3. Cover bowl with plastic wrap. 4. let sit 5 minutes or water completely absorbed. 5. Meanwhile heat 2 Tbs oil in skillet and saute peppers and onions crisp tender. 6. Add seasoning and spices as they cook. 7. Add to couscous along with remaining 3 tbs of oil, vinegar and o.j. 8. Toss to coat 9. Cover and chill tell serving time |
