From Fantastic Foods. Needs salt! Ingredients:
1 cup couscous, dry |
2 tbs olive oil |
1 cup chicken broth |
1 large onion |
2 carrots, peeled & julienned |
1 turnip, peeled & julienned |
1 zucchini, peeled & julienned |
1 sweet potato, peeled & julienned |
15 oz garbanzo beans, drained |
2 tbs tomato paste |
1/2 tsp ground cinnamon |
1/2 tsp curry |
1 pinch cumin |
Directions:
1. Prepare 4 servings of couscous (usually about a cup dry) per package instructions 2. On high heat, saute onion, carrots, sweet potato, zucchini, & turnups until 3/4 cooked for approx. 10 minutes. 3. Reduce heat to medium & add chicken broth. Let mix simmer. 4. Add spices, tomato paste, & chickpeas. 5. Stir in cooked couscous. Cover & remove from burner. 6. Can be garnished with golden raisins & nuts (pine nuts or almonds recommended) if desired. |
