An inexpensive, healthy salad with north african flavors. Quick to make and great to pack for lunches. Ingredients:
7 ounces chickpeas, rinsed and drained |
1 carrot, grated |
2 tablespoons onions, minced |
2 tablespoons raisins, chopped |
1 garlic clove, minced |
1 tablespoon olive oil |
1 1/2 teaspoons lemon juice |
1/4 teaspoon paprika |
1/4 teaspoon cumin |
1/8 teaspoon salt |
1/8 teaspoon black pepper |
Directions:
1. Combine all ingredients. 2. Chill. |
