Ingredients:
2 tablespoons olive oil |
2 garlic cloves, minced |
3 tablespoons freshly squeezed lemon juice |
15 sprigs fresh parsley |
1 teaspoon sweet hungarian paprika |
1/2 teaspoon ground cumin |
1/2 teaspoon salt |
5 large carrots |
1/4 cup dried currants |
Directions:
1. Instructions 2. In a food processor, blend the oil, lemon juice, cilantro, paprika, cumin, and salt until smooth. Pour dressing into a large bowl or large storage container. 3. Add the carrots to the processor and pulse until finely chopped. (You should have about 4 cups.) Toss the carrots and currants in the dressing until well coated. Serve immediately, or cover and refrigerate for up to 3 days. |
