These are traditionally kabobs made with lamb. I substituted bison to cut the fat, and find it easier to do as burgers. This, with a generous tossed salad, makes a great meal. Adapted from Arabesque. Ingredients:
2 lbs ground bison |
1 onion, finely chopped |
1/2 cup parsley, chopped |
1/2 cup coriander, chopped |
1/3 cup fresh mint, chopped |
1/2 tsp ground cumin |
1/2 tsp ground cinnamon |
1/2 tsp ground ginger |
1 pinch of cayenne |
Directions:
1. Put all of the ingredients in a large bowl. Mix well and work with your hands into a soft paste. Wash your hands and rub them with olive oil. Take lumps of the paste and fashion into 6 burgers. 2. Broil or grill until done. 3. Serve hot with good bread and a salad of cucumber, tomato, and red onion, dressed with lemon juice and olive oil. |
