Moroccan Beef Stew With Dried Fruit

This is a bit on the sweet side, delicious and a nice change from savory stews.Add some hot peppers if you wish to give itmore of a kick! Note the sweetness from dried fruit and honey and the savory herbs. No cinnamon or cumin in this one. Read more . its delcious!
Ingredients:
3 lb lean beef stew cubes
olive oil to saute
1 large onion chopped
1 cup dry white wine
1 cup water or beef broth
1/4 cup dark raisins
1/2 cup chopped pitted prunes
1/2 cup chopped dried apricots
1/4 cup chopped pitted dates
1/4 cup pitted green olives
1/4 cup pitted black olives
parsley, sage, rosemary, thyme to taste (fresh or less if dried)
salt and pepper to taste
honey to taste
paprika to taste
1 to 2 tbs. fine granulated tapioca or flour to thicken
1/4 cup sliced almonds or as desired
Directions:
1. In pot heat some olive oil and brown meat and then onions.
2. Add wine and water plus remaining fruits and seasoning to taste.
3. Bring to a boil and then cover and simmer until meat is tender (1 1/2 to 2 hours).
4. Correct seasoning and add some honey (to taste).
5. Stir in tapioca or flour and cook and stir to thicken mixture.
6. If you want more of a spicy taste, add the paprika.
7. Stir in almonds just before serving.
8. Note: tastes best when allowed to cool and be reheated.
9. Serves 6 to 8
