Surprising list of ingredients makes moist, nutrient-dense lowfat breakfast or snack muffins.
Ingredients:
15 1/2 oz white beans, drained and rinsed
2 eggs
1/2 c carrots, finely grated
1/2 c molasses
1 tsp baking powder
1 t baking soda
2 tsp cinnamon
1 tsp nutmeg
1/2 c mashed potato flakes
3 tbsp flax seed, ground
1 tbsp vanilla
3 tbsp light margarine, brummel and brown
1/4 c. nonfat yogurt, plain
1/2 c walnuts, chopped
Directions:
1. Preheat oven to 325*F.
2. In blender, thoroughly mash beans, eggs and carrots.
3. Mix all remaining ingredients in mixing bowl and add blender contents until just moist (do not overmix). Pour into paper-lined mini muffin tins.
4. Bake 25 minutes. Muffins will not raise and will brown
