i found this while looking for another recipe and it is chock full of raisins, nuts, coconut, carrots and apples..sounded like a health start to a morning or a good afternoon snack.... I haven't made these... Ingredients:
2 cups flour |
2 teaspoons baking soda |
1/2 teaspoon salt |
1/2 cup raisins |
1/2 cup coconut |
3 large eggs |
2 teaspoons vanilla |
1 1/4 cup sugar |
2 cups grated carrots |
2 teaspoons cinnamon |
1/2 cup chopped pecans |
1 grated apple |
1 cup vegetable oil |
Directions:
1. Preheat oven to 350 degrees. Mix all ingredients together. Fill paper 2. lined muffin tins 2/3 of the way full. Bake for 35 minutes. |
