i found this while looking for another recipe and it is chock full of raisins, nuts, coconut, carrots and apples..sounded like a health start to a morning or a good afternoon snack.... I haven't made these...
Ingredients:
2 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup raisins
1/2 cup coconut
3 large eggs
2 teaspoons vanilla
1 1/4 cup sugar
2 cups grated carrots
2 teaspoons cinnamon
1/2 cup chopped pecans
1 grated apple
1 cup vegetable oil
Directions:
1. Preheat oven to 350 degrees. Mix all ingredients together. Fill paper
2. lined muffin tins 2/3 of the way full. Bake for 35 minutes.
