Great little muffins with fruit,coconut,carrots and nuts. Ingredients:
11/4c sugar |
21/4cflour |
1tbs. cinnamon |
2tsp baking soda |
1/2tsp salt |
1/2c shreaded coconut |
1/2c raisins |
2c peeled,grated carrots |
1apple,peeled,shreaded |
8 oz. crushed pineapple,drained |
1/2c pecans ,chopped |
3 eggs |
1c canola oil |
1tsp vanilla |
Directions:
1. Preheat oven to 350 2. Grease 18 muffin cups 3. In a large bowl,sift together sugar,flour,cinnamon,baking soda and salt. 4. Add coconut,raisins,carrots apple,pineapple,and nuts.Stir to combine 5. In seperate bowl,whisk eggs,oil and vanilla. Pour into dry mixture and blend well. 6. Spoon batter,filling to the brim,into 18 muffin cups. Bake 35 mins. Cool in cups 10 mins. Turn onto raack,finish cooling. 7. Note: These muffins freeze well! |
