These are health packed full of veggies, nuts and fruits... Ingredients:
2 cups all purpose flour |
1 1/4 cups sugar |
2 teaspoons baking soda |
2 teaspoons ground cinnamon |
1/2 teaspoons salt |
2 cups grated carrots |
1/2 cup raisins |
1/2 cup shredded coconut |
1/2 cup pecans |
3 eggs |
1 cup canola |
1 medium tart apple, peeled and shredded |
2 teaspoons vanilla extract |
Directions:
1. In a large bowl. combine first 5 ingredients. 2. Stir in next 4 ingredients. 3. Combine next 4 ingredients; stir into dry ingredients just until moistened. 4. Spoon into greased pr paper lined mufin cups. 5. Bake at 350 degrees for 15 to 18 minutes 6. Yield: about 18 muffins.. |
