Ingredients:
1 cup sugar |
2 cups flour |
2 teaspoons baking soda |
2 teaspoons cinnamon |
1/4 teaspoon salt |
3 large eggs, beaten |
2/3 cup vegetable oil |
2 tablespoons vanilla |
2 cups carrots, grated |
1 large apple, grated |
1/2 cup flaked coconut |
1/2 cup raisins |
1/2 cup chopped walnuts or 1/2 cup pecans |
Directions:
1. Sift sugar, flour, baking soda, cinnamon, and salt together; set aside. 2. Combine eggs, oil, and vanilla in a bowl; mix well. 3. Stir in carrots, apple, coconut, raisins, and nuts; add dry ingredients and mic well. 4. Spoon into greased muffin pans. 5. Bake at 350 degrees for 22-27 minutes. |
