these sound healthier than normal morning muffins... lots of good things,... carrots apples coconut raisins and nuts... I really liked the sound of these... I'm not sure where I got this recipe... Ingredients:
2 c all-purpose flour |
3/4 c sugar |
2 ts baking soda |
1 1/2 ts ground cinnamon |
1/2 ts salt |
3 eggs |
1/2 c vegetable oil |
1/2 c milk |
1 1/2 ts vanilla extract |
2 c peeled apples; chopped |
2 c carrots; grated |
1/2 c flaked coconut |
1/2 c raisins |
1/2 c sliced almonds |
Directions:
1. In a large bowl, combine flour, sugar, baking soda, cinnamon and salt. In another bowl, beat eggs; add oil, milk and vanilla, mix well; stir into dry ingredients just until moistened. Fold in the remaining ingredients. Fill greased of paper lined muffing cups three-fourths full. Bake at 375 degrees for 20-25 minutes or until muffins test done. |
