these sound healthier than normal morning muffins... lots of good things,... carrots apples coconut raisins and nuts... I really liked the sound of these... I'm not sure where I got this recipe...
Ingredients:
2 c all-purpose flour
3/4 c sugar
2 ts baking soda
1 1/2 ts ground cinnamon
1/2 ts salt
3 eggs
1/2 c vegetable oil
1/2 c milk
1 1/2 ts vanilla extract
2 c peeled apples; chopped
2 c carrots; grated
1/2 c flaked coconut
1/2 c raisins
1/2 c sliced almonds
Directions:
1. In a large bowl, combine flour, sugar, baking soda, cinnamon and salt. In another bowl, beat eggs; add oil, milk and vanilla, mix well; stir into dry ingredients just until moistened. Fold in the remaining ingredients. Fill greased of paper lined muffing cups three-fourths full. Bake at 375 degrees for 20-25 minutes or until muffins test done.
