Note: these loaves are baked in a steamed oven for a very moist texture. and wrapped when cooled and stored overnight. Makes two loaves and perfect for a nutritious breakfast or brunch! Ingredients:
1 cup shortening |
1 1/2 cup brown sugar, firmly packed |
4 eggs |
2 1/2 cup all-purpose flour, sifted |
1 tsp baking powder |
1/2 tsp baking soda |
1 1/2 tsp salt |
2 tsp cinnamon |
3/4 tsp cloves |
3/4 tsp nutmeg |
2 cup canned applesauce, sweetened |
1 1/2 cup oats, uncooked (quick or old-fashioned) |
1 cup raisins |
1 cup pitted dates -- cut in small pieces |
1 cup coarsely chopped nuts |
Directions:
1. Preheat oven to 275 degrees. 2. Beat shortening and sugar together until creamy. 3. Add eggs, one at a time, beating well after each addition. 4. Sift together 2 cups of the flour, baking powder, soda, salt and spices. 5. Add alternately with applesauce to creamed mixture; blend well. 6. Stir in oats. 7. Combine remaining 1/2 cup flour with raisins, dates, and nuts; stir to 8. coat fruits and nuts evenly with flour. 9. Stir into batter. 10. Pour into 2 greased and waxed paper-lined 8-1/2 x 4-1/2 x 2-1/2 loaf pans. 11. Set a pan of hot water in the bottom of oven before adding loaves. 12. Bake loaves for 2 hours. 13. Loosen edges; cool on wire rack about 10 minutes. 14. Remove from pans; cool thoroughly. 15. Wrap cooled bread in plastic and store one day before slicing. 16. Yield: 2 loaves |
