This hearty and delicious dish is excellent for a light lunch, brunch or supper. Deliciossso!!! Ingredients:
2 tablespoons butter |
1 tablespoon all-purpose flour |
1/4 cup milk |
1/4 cup shredded swiss cheese |
1 tablespoon lemon juice |
salt, to taste |
pepper, to taste |
1 lb zucchini |
1 small onion, sliced |
8 eggs |
1/2 teaspoon dried basil leaves, crumbled |
Directions:
1. To make Mornay sauce, melt 1 tablespoons butter in small saucepan. Blend in flour. 2. Cook, stirring until smooth and bubbly. 3. Off heat, stir in 2/3 cup milk. Put back over heat and cook, stirring until thickened. 4. Stir in cheeses, lemon juice and salt and pepper to taste. keep warm. 5. In large skillet, melt remaining 1 tablespoons butter. 6. Add zucchini and onion and sprinkle with 1/4 teaspoons salt. Saute, stirring frequently, for 5 minute or until golden brown. 7. Beat together eggs, 1/2 cup milk, basil, 1/2 teaspoons salt and peppr to taste. 8. Turn into skillet with zucchini. Cook, stirring occasionally, until scrambled but still soft. 9. Serve at once with Mornay sauce. |
