My mother use to have a cup of hot cocoa ready for my sister and I when we came home from school. In Denmark we always rode our bikes to and from school no matter how much it rained or snowed, so we really welcomed a treat of pancakes with fresh fruit and hot cocoa to warm up our frozen bodies. Ingredients:
1 cup flour |
1 teaspoon salt |
1 teaspoon baking powder |
2 tablespoons icing sugar |
2 eggs |
1 cup milk |
1/2 teaspoon vanilla |
1 tablespoon lemon juice |
2 tablespoons icing sugar |
Directions:
1. Sift all dry ingredients together and make a well in the centre. 2. In a separate bowl, beat the eggs and add the remaining liquid ingredients. 3. Pour the beaten liquid into the flour mixture. 4. Don't over mix and ignore the small lumps. 5. Wipe a hot griddle lightly with oil. 6. Spoon batter onto hot griddle, and let it spread until thin. 7. When browned on bottom flip onto other side. 8. Fill with fresh fruit, and roll into tubes. 9. Sprinkle with fresh lemon juice, and coat with sieved icing sugar. |
