Morgans Famous White Lightening Chili |

I made White Lightening Chili for Dinner at Coach's House for my huband's football players. Morgan liked this and tried to make it without the recipe for one of the Band class' Carry-in-Lunches. (You get a bunch of Christian School kids together, and it just carries over from Church! Read more !) Truly, I think his is the better recipe. Watch out, this is HOT Ingredients:
1 1/2 lb bonless, skinnless chicken breast |
cinnamon chipotle rub |
1 sm to med vadalia onion, chopped |
6 - 8 cloves of garlic mashed |
2 cans navy beans |
2 cans cannellini beans |
2 cups chicken broth |
2 4oz cans green chilis |
1/4 jar jalapeno pepper slices |
1 or 2 chipotle chili in adobo sauce chopped |
2 tsp cumin |
1/4 tsp ginger (for extra bite!) |
handful of chili powder |
Directions:
1. Rub chicken breast with cinnamon chipotle rub and bake for 20 min. (or grill for a smokey flavor) 2. Saute onion & garlic in a spash of olive oil until transparent and starting to carmelize 3. Mix beans, peppers, spices and chicken broth in the crock-pot. 4. Cut chicken up when it's done and add along with the onions to the bean and spice mixture. 5. Set on 8 to 10 hour setting. 6. We serve with cornbread and lots of milk to cool down the hot mouth! |
