Its morel season and I have been bringing them in by the dozens (and the season is just starting up) here is one way we like them around here... Ingredients:
1 handful of fresh morels or a reconstituted equivalent |
10 eggs |
a few oz of grated havarti or provolone |
4 strips of crispy bacon |
1 tbs milk |
salt and pepper to taste |
1/4 stick of butter |
Directions:
1. Slice the mushrooms lengthwise into quarters and fry in 1/4 c butter for a few minutes, set aside. 2. beat the eggs with milk salt and pepper and add to the mushroom butter in the pan, stir frequently till almost set, add cheese and bacon, take off heat. 3. Add the mushrooms, serve with fresh fruit and toast. 4. Enjoy! |
