From Moosewood Restaurant, Cooking for Health pg 240. This recipie omits the rotini which it is intended to be a topping for so that you can add it seperately, or use any other starch as a base instead of rotini; brown rice, quinoa, barley, whatever. Ingredients:
1 cup lentils |
1 1/2 cups onions |
3 garlic cloves, minced |
1 1/2 tsp salt |
1 cup carrots, diced |
1/2 tsp paprika |
4 cups kale, chopped |
4 tsp thyme |
2 cups tomatoes, diced |
Directions:
1. cook all ingredients, combine with your favorite starch [pasta, rice, barley, etc], and maybe a little shredded parmesan. Eat. |
