We have tried many recipes over the years and this one is our favorite. Ingredients:
50 lbs venison |
50 lbs fatty pork |
2 lbs tender quick |
6 ounces pepper |
1 ounce nutmeg |
8 ounces mustard seeds |
1 tablespoon garlic powder |
1 ounce ground marjoram |
Directions:
1. Place 50/50 mixture onto grinder , sprinkle seasonings on meat, add slowly 2 cups of cold water and mix seasonings through meat evenly. Perform 1st grind, add water as needed to incorporate seasonings. Grind a second time with medium blade. 2. Stuff into pork casings and smoke. |
