These are delicious cookies, simply prepare your favorite sugar cookie dough, no chilling required, take a shortcut by using ready made lemon curd or lemon pie filling... Ingredients:

1 c. coconut |
1/2 c. lemon curd or pie filling |
2 oz. white chocolate or almond bark |
Directions:
1. preheat oven to 350 2. Mix up your sugar cookie dough 3. add the coconut 4. chill if the dough is too sticky to handle 5. shape dough into 1 inch balls 6. place 2 in. apart on ungreased cookie sheets 7. make an indentation with your thumb in the middle of each cookie 8. spoon about 1/2 tsp. lemon filling into each indentation 9. bake for 10-13 minutes or until the edges are lightly browned 10. remove from cookie sheets immediately 11. cool 5 minutes on a rack 12. microwave the bark in a small microwave bowl on medium for 2 minutes, stir until smooth 13. drizzle over cookies |
