From Good Earth & Country Cooking by Betty Groff and Jose Wilson, this cake-pie is truly delectable in the tradition of Pennsylvania's heartland. Makes two 9 pies. Ingredients:
2 unbaked 9 pie shells |
top part |
zest of 1 lemon |
1/2 cup sugar |
1/2 cup molasses |
1 egg, beaten |
1 tablespoon flour |
1 cup boiling water |
bottom part |
1 cup sugar |
1/4 cup lard (preferred) or shortening |
1 egg |
1/2 cup milk |
1 1/2 cups flour |
2 teaspoons baking powder |
1/2 teaspoon salt |
Directions:
1. Preheat oven to 350 degrees F.. 2. TOP PART: 3. Blend all ingredients in a saucepan and bring to a boil. 4. Remove from heat. 5. BOTTOM PART: 6. Cream sugar and shortening in a mixer until fluffy. 7. Beat in egg. 8. Sift flour, baking powder and salt together. 9. Beat in milk alternately with flour mixture. 10. Pour into unbaked pie shells, dividing evenly. 11. Pour on topping. 12. Bake for 45 minutes. |
