My mother would make this when it was my turn to bring in the snack at Hudson Montessori School. It always got rave reviews! Ingredients:
3 1/2 cups flour |
4 teaspoons baking powder |
1/2 teaspoon baking soda |
1 teaspoon salt |
2/3 cup shortening |
1 1/3 cups sugar |
4 eggs, well-beaten |
5 medium bananas or 6 small bananas, mashed |
1 cup walnuts (optional) or 1 cup dates (optional) |
Directions:
1. Mix shortening, sugar, & eggs in mixer. 2. Add flour, baking powder, baking soda, and salt. 3. Add bananas & mix well. 4. Bake at 350 degrees for 70 minutes. |
