My sis-inlaw gave this to me Ingredients:
1 lb ground beef |
1 tablespoon instant minced onion |
1 (8 ounce) package corn chips, crushed (3 cups crushed) |
1 (15 ounce) can mild enchilada sauce |
6 ounces shredded monterey jack cheese |
sour cream (optional) |
Directions:
1. Preheat oven to 350*. 2. In skillet, brown ground beef. 3. Add onion; reduce heat and saute 5 minutes. 4. Drain excess fat. 5. Place 2 cups of crushed corn chips in bottom of greased 1 1/2 quart dish. 6. Layer ground beef over chips. 7. Pour enchilada sauce over beef. 8. Top with cheese. 9. Bake 20-30 minutes or until bubbly and heated through. 10. Sprinkle remaining corn chips over top of casserole. 11. Bake additional 5 minutes. 12. Top individual servings with sour cream, if desired. |
