Monterey Jack Bacon Avocado Omelet |

This is absolutely incredible with a great blending of flavors. It's spicy and creamy and loaded with cheese. Your guests will thank you for serving this delight. My family scarfs it down when I make it. Enjoy Ingredients:
2/3 cup finely chopped seeded tomato |
2 tablespoons finely chopped red onion |
1 pickled jalapeno minced |
2 tablespoons minced fresh cilantro |
1 tablespoon fresh lime juice |
1 teaspoon salt |
1 teaspoon freshly ground black pepper |
4 large eggs |
2 tablespoons water |
1 tablespoon unsalted butter |
3 slices lean bacon cooked and crumbled |
1 small avocado peeled and chopped in half-inch cubes. |
1/2 cup coarsely grated monterey jack cheese |
Directions:
1. In a small bowl stir together tomato, onion, jalapeno, cilantro, juice, salt and pepper. 2. In a separate bowl whisk together eggs and water. 3. In a non-stick skillet heat butter over moderately high heat until foam subsides. 4. Pour in half of the egg mixture tiling skillet to spread evenly over the bottom. 5. Cook 1 minute then sprinkle half the omelet with half the bacon, half the avocado and half the Monterey jack cheese. 6. Cook for 1 minute. 7. Fold omelet over filling then transfer to a plate, and keep warm. 8. Make another omelet in the same manner with the remaining butter. 9. Serve omelets with tomato mixture over the top. |
