We're far away from familiar tables.) Years ago Mom compiled a family cook book for my eldest sister when she went off to college. What has become of the final version I don't know, needless to say its gone. However I've got Mom's notes. I'm attempting to save these recipes by posting them here. Any of Mom's special notes I'll include in parenthesis. But needless to say some of these are not complete recipes. Enjoy! *1990 was the year my family moved from Texas to California. Our new neighbors welcomed the 7 of us with open arms. Especially after they discovered Mom can COOK and is used to feeding an army. This was one of our new neighbor recipes, which we fell in love with. Ingredients:
3 cups zucchini |
1 cup bisquick baking mix |
1/2 cup diced onion |
1/2 cup parmesan cheese |
1/2 cup vegetable oil |
4 eggs |
2 tablespoons fresh parsley |
1/2 teaspoon seasoning salt |
1 dash pepper |
1 minced garlic clove |
3/4 cup cheddar cheese |
Directions:
1. Grate zucchini and cheeses. 2. Chop parsley. 3. Lightly beat eggs. 4. Mix together all ingredients, except cheddar. 5. Spread into a greased 13 X 9 X 2 pan. 6. Bake 350F for 15 minutes. 7. Top with Cheddar and bake an additional 10 minutes. 8. *If Cheddar is not used bake 25 minutes until golden. |
