Mom's Zucchini Orange Bread |

My mom loves to garden and I remember growing up having a lot of zucchini, in a lot of different ways. The bread is moist and delicious. I am posting the recipe as she gave it to me but I often reduce the oil to 1/4 cup and add in 1/4 cup apple sauce. Makes the bread slightly more dense but cuts out a little fat. Ingredients:
3 eggs, beaten |
1/2 cup cooking oil |
1 1/2 cups sugar |
1 3/4 cups zucchini, grated |
1/4 cup orange juice concentrate |
2 tablespoons orange peel, grated |
1 teaspoon vanilla |
3 cups flour |
1/2 teaspoon salt |
1/4 teaspoon baking powder |
1 teaspoon baking soda |
Directions:
1. Mix eggs with oil & sugar until well beaten. Add zucchini, oj, orange peel and vanilla - mix well. 2. Mix flour, salt, baking powder & soda together and add to creamed mixture. Stir until well blended. 3. Pour into 2 greased loaf pans. Bake at 350 degrees for about 45 minute. |
