This is a basic zucchini sweet bread. A perfect way to put a dent in that bumper crop. Freezes really well. My grandmother used to sell this in her bakery in Vermont. Ingredients:
3 eggs |
1 3/4c granulated sugar |
3/4c vegetable oil |
1/4c milk |
2tsp vanilla |
3c all purpose flour |
1tsp baking soda |
1tsp salt |
1/2tsp baking powder |
2tsp cinnamon |
2c shredded zucchini, well packed |
Directions:
1. Heat oven to 350f and grease 2 9x5 pans. 2. Shred zucchini, using either a box grater or food processor. 3. Combine all wet ingredients add dry and mix well. 4. Fold in shredded zucchini. 5. Scoop batter evenly into loaf pans. 6. Bake about an hour, use the toothpick test to check for doneness. 7. Cool in pan a couple of minutes then empty pans onto cooling rack. 8. Cool about an hour before slicing. |
