Our garden is filled with zucchini right now so my dear mom gave me this recipe. I made these for the first time this weekend and took them to a BBQ, everyone gobbled them right up! Delicious!! Ingredients:
4 zucchini, unpeeled,sliced thin |
4 eggs, slightly beaten |
1 clove garlic, chopped |
1 cup bisquick |
1/2 cup onion, chopped |
1/2 cup parmesan cheese |
1/2 cup vegetable oil |
2 tablespoons fresh parsley |
1/2 teaspoon salt |
1/2 teaspoon season salt |
1/2 teaspoon oregano |
Directions:
1. Heat oven to 350. 2. Grease bottom and sides of 9x13 glass dish. 3. Stir all ingredients together well. 4. Pour evenly in dish. 5. Bake 25 to 35 minutes. 6. Let cool and slice into square pieces. |
