This is THE best recipe for squash casserole. Mom only makes it once a year for Thanksgiving but I manage to beg her to make it for my birthday as well! I could live on this stuff! Ingredients:
1 lb yellow squash |
1 small white onion, chopped |
1 (6 ounce) box chicken stove top stuffing mix |
1 (10 ounce) can cream of mushroom soup |
8 ounces sour cream |
1 1/2 cups four-cheese mexican blend cheese |
Directions:
1. Cook squash until tender, drain and mash. 2. Add onion, stove top, mushroom soup, sour cream and mix well in a large casserole dish. 3. Top with cheese and bake at 350 for 30 minutes or until cheese has totally melted. |
